Isabella stopped by the JFS Orlando Pearlman Emergency Food Pantry with a generous donation to our Summer Food Drive! Did you know, during the summer months, JFS Orlando provides roughly 40% more families with food from the Pearlman Emergency Food Pantry? Once school is out, Central Florida students who depend on free and reduced lunches will no longer have access to proper and nutritious food. We need your help keeping the pantry stocked so JFS Orlando can continue to feed hungry families and individuals.

Isabella’s donation included ingredients needed to create her “Mamma’s Signature Dish Pasta Patate”. Our mouths are watering just by reading the recipe! Pasta Patate e Piselli or One Pot Primavera PastaDSCN0454

SERVES 4

1 medium onion chopped                                                                                    

4 cloves garlic sliced                                                                                              

1 medium potatoes cut in cubes                                                                                

1 medium zucchini cut in half moons
1 medium yellow summer squash, cut 1/4″-thick piecesDSCN0468
1 cups green peas
6 tbsp. extra virgin olive oil
4 plum tomatoes, peeled, cored, and coarsely chopped                    

Salt and cayenne to taste
1 lb. spaghetti or penne pasta
1⁄4 cup freshly grated Romano Cheese                                                

2 cup chicken stock
handful of fresh basil, shredded

Heat olive oil in a 4 qt pan over medium-high heat. Sauté onions for 3 minutes add potatoes and cook until almost done, add garlic and all other vegetables. Season with salt and cayenne.

Add chicken stock and simmer until start to thicken. Drop pasta into the pan and cook on medium heat. Add water or more stock until pasta is covered. Cook for 8 min or until pasta is done.

Stir in Romano cheese and fresh basil and serve.
